I had been wanting to make a breakfast item that wasn't the usual pancakes, waffles, bacon, eggs, etc. I saw a pin on Pinterest called "The Best Ever Blueberry Muffins" and figured I would see what I liked and didn't like about the recipe, and go from there. Don't get me wrong, I love blueberry muffins... But I decided that I wanted to used strawberries to mix things up, and try something you don't see every day.

I wanted to try something new, and so I thought why not margarita cupcakes! It sounded fun and adventurous. After a little inspiration on proportions (and lime juice!), I pretty much winged the rest. I had no idea how they would turn out, but I decided to replace the normal liquids with fresh lime juice and pure agave tequila. For the icing, I decided to use my buttercream recipe, but spiced it up with blue curacao liqueur and a couple drops of yellow food dye.

End results? The icing was PERFECT. The cupcakes? They were a little stronger than I wanted them to be, so it overpowered the lime taste. Just a little. I think I may use just a little less tequila next time (my hubby's coworkers all thought they were great, though!). But aren't they pretty?

I wanted something a little different to eat with my ice cream than just a simple cookie or brownie, and I didn't want a sundae. So I decided to make mini bowls out of chocolate chip cookie dough for this vanilla ice cream. This ice cream cookie cup is topped with caramel drizzle, dark chocolate ganache, and just a little bit of whipped cream. They were just big enough to hit the spot, but small enough to help with portion control!

What type of cookie dough would you make your cups out of, and what type of ice cream would you pair with it? I have a few other ideas rattling around, but I'd love to hear yours, too!

So, while I was "away", I made this fantastic Red Velvet Cheesecake. The bottom layer is a cheesecake with an Oreo crust, the top layer is an extremely moist red velvet cake, with generous helpings of dark chocolate ganache in between and on top to decorate, as well as cream cheese icing around.

I'm Back!

So, I realize that it's been a little while since my last post here on the site, and I apologize. It's not that I haven't been baking. It's that I moved from Orlando, Florida to Charlotte, North Carolina and was semi-homeless for about a week and a half. That means that my baking has been done in Virginia (my hometown) and in my new city. And then I had to dig out all the equipment to edit the pictures. The picture above is of me decorating a Red Velvet Cheesecake (which was to die for, by the way), and it's just the first of many pictures to come. So, be sure to continue to check back regularly over the next week or so as I update the website with pictures and stories! It feels so good to be back!

I tend to bake on whims, by inspiration, and cravings. People always ask me where I find my recipes, etc... However, most are my own-- including this one. I experiment all the time. I'm also a perfectionist, so if I bake something and don't feel it's perfect (or close enough), it won't end up on here. My husband will probably end up eating it. I know, I know... he complains about it all the time (note my sarcasm)!

The cupcake is a mixture of chocolate and vanilla, swirled together with crumbled Oreo's baked in. If you look carefully in both pictures, you can still see the vanilla swirl in the cupcakes. The icing is a unique blend of a couple different kinds of my homemade frosting, with crumbled Oreo's blended in. The icing really tastes like an Oreo, or cookies 'n cream ice cream... both of which are on the top of my list of favorites! If you enjoy either one of these, then you'll love these cupcakes!

Don't these look amazing?!? Well, guess what? They are! I am not gluten free, but more and more I am finding those that are. I was asked to make these by special request, and I decided to try them out in a test run before delivering the goods to make sure they turned out alright. They are definitely more than alright... they're pretty tasty. It's hard to believe that there aren't any grains in these brownies. So, if you're looking for a nice gluten or grain free treat, these are definitely for you!

So, the water polo team from Freedom High School in Orlando asked me to make the cake for their awards ceremony that was held this evening. I decided that I wanted to make the sheet cake look like it was water, and it was overflowing out of a pool or splashing around when a polo ball landed. Using regular blue icing wasn't going to cut it, so I went out of my way to get piping gel and mixed blue glitter gel with it to give it the color that it has.

For the bottom layer, I made a vanilla cream cheese cake. And for the top layer (the water polo ball), I made a red velvet marble cake. I iced all of it with a meringue cream cheese frosting... in different colors, of course!

This is my first time doing Strawberry Shortcake as an actual cake rather than an ice cream cake. It was definitely an adventure, and it was a great one worth taking! 

This is a homemade, two-layered vanilla cake with fresh strawberries and buttercream icing (both regular and strawberry flavored). The picture above is the bottom layer with the filling in the middle, and the picture below is of the finished product that was ordered.

And here it is after the frosting and decoration! It's a vanilla cupcake with the strawberry cream cheese filling and whipped, cream cheese frosting. I decorated the top with pink crystallized sprinkles and edible pearls. These are to die for!

Mango Coconut Bread

This bread sounds a little different, but oh my! I tried a slice, and the next thing I knew, I was trying to find someone to hide it from me because I had just about eaten the entire loaf by myself. With fresh, pureed mango and shredded coconut, it's incredible regardless of whether you eat it warm, at room temperature, or chilled.

Fudgy Peanut Butter Coconut No Bake Cookies

I made these the evening of Christmas Day this past year, along with hot apple cider for my husband and I. It was our first Christmas as a married couple, and I wanted to do something memorable. So, cookies it was! These were really gooey, set very well, and were super yummy :)

Sour Cream Sugar Cookies

To be completely honest, I don't like sour cream. The only things I'll eat sour cream with-- and actually think they taste good-- are strawberries dipped in sour cream and then rolled in brown sugar (yes, I thought it sounded strange until I tried it), and these sour cream sugar cookies. However, with these cookies, you don't taste the sour cream. It just helps to make them light and fluffy.

In honor of Mother's Day, which is coming up really soon, I decided to take my homemade cream cheese icing and color it pink and purple. Regardless of whether you actually put icing on these cookies or not, anyone that has eaten these delicious cookies will tell you that they can't just eat one. They are so addicting!

Sittin' Pretties (aka Sitting Pretties)

I remember year after year, at Christmastime, spending hours and hours making these cookies with my mom, and then eating so many of them! These are my all-time favorite cookies! They are probably the most time consuming to make, but the payoff is huge once you taste one :) Some cookies, once you've eaten a bunch of them, leave a sugary aftertaste in your mouth... like you need to brush your teeth or drink a glass of water or milk. However, these are not like that. The only way I can describe these, is that they have a "clean" taste to them.

Reese's Peanut Butter Cup Chocolate Chip Cookies

I've been baking up a storm the last few days, and in the process, have had to make a few trips to Sam's Club, Walmart, and Publix for supplies. It's the busiest I've been in a while, but my heart couldn't be happier. I've made Chocolate Chip cookies, Peanut Butter Chocolate Chip cookies, Molasses cookies, Red Velvet Cheesecake brownies, Reese's Peanut Butter Cup Chocolate Chip cookies (pictured below), and the dough for Sour Cream Sugar cookies and Sittin' Pretties. To top it off, I'm in the process of making cream cheese icing right now while I let the cookie dough chill!

Mandy's Molasses Cookies

I know that there aren't many people who make these cookies anymore, but you know what? They are yummy! So, I looked up and tried a whole bunch of different recipes for molasses cookies. But alas, I didn't quite like any of them. They were too crunchy, didn't have the crackles in the top, didn't have enough spice in them or had too much, were too flat, or just plain old didn't taste right. So, like the creative person that I am, I threw all those other recipes out the window and made my own! And since then, I cannot tell you how many amazing compliments I've gotten on these... even from people who aren't particularly fans of molasses cookies. Below, is probably the best and funniest compliment that I've gotten on these:

Pumpkin is probably one of my favorite things ever. Too bad it's mostly seasonal, unless you find the right grocery stores at the right times that carry it at random times! I've made pumpkin bread and muffins for years with my mom, but had never attempted pumpkin cream cheese muffins until almost two years ago. This picture is from my first attempt, and they turned out perfectly! So yummy... I had to give them away to friends to keep from eating them all myself :)

Strawberry Shortcake Ice Cream Cake

The picture above, is the very first ice cream cake I ever made. I made it as a surprise for my husband's birthday last April. In all respects, it was an experiment. Thankfully, I've had enough experience through the years baking and creating with my mom that most of my experiments turn out pretty well... including this one. It's three layers: Strawberry Ice Cream sandwiched in between two different kinds of Vanilla Ice Cream, with Strawberry Preserves and crumbled Vanilla Wafers on either side. For this one, I used actual frosting (which gave me a run for my money). I found that I had to layer the frosting much thicker for it to stay on. Otherwise, it wanted to slide off the sides. Overall, it was a really fun first experience, my husband was pleasantly surprised, and his stomach was happy!

Since it turned out so well, two weeks later, my best friend asked me to make an almost identical one for her mother, who was coming into town for her birthday. They didn't want nearly as much ice cream cake, and they aren't fans of frosting, so I modified it into a two-layer and used Cool Whip instead of the frosting. Besides cutting production time, I found that using the Cool Whip made my life so much easier! It's also less "in your face" sweet than the frosting is, which can be good depending on your taste.
