Red Moscato Cupcakes

Red Moscato Cupcakes

So, I was trying to decide what to give my brother's girlfriend for her 21st birthday. She likes to bake as well, so I started thinking up ideas of what I could make for her. Then I figured I would be clever and make her something specially for her 21st... so began my thought process on specifics.

Cookie Pie

Cookie Pie

Well, my in-laws and niece are in town from the west coast, and my niece asked if she could bake with me while she's visiting. Just so happens that I have also been feeling nostalgic for my alma mater and my favorite dessert that they offered while I went to college there. It was called "Tollhouse Pie".

Maple Bacon Cupcakes

Maple Bacon Cupcakes

Yep, I did it... I turned IHOP into a cupcake (or so says my friend, Nicole). And to be honest, when my husband asked me to make these about a month ago, they sounded pretty disgusting to me. Bacon in/ on a cupcake??? Ewww!

Strawberry Streusel Muffins

Strawberry Streusel Muffins

I had been wanting to make a breakfast item that wasn't the usual pancakes, waffles, bacon, eggs, etc. I saw a pin on Pinterest called "The Best Ever Blueberry Muffins" and figured I would see what I liked and didn't like about the recipe, and go from there. Don't get me wrong, I love blueberry muffins... But I decided that I wanted to used strawberries to mix things up, and try something you don't see every day.

Margarita Cupcakes

Margarita Cupcakes

I wanted to try something new, and so I thought why not margarita cupcakes! It sounded fun and adventurous. After a little inspiration on proportions (and lime juice!), I pretty much winged the rest. I had no idea how they would turn out, but I decided to replace the normal liquids with fresh lime juice and pure agave tequila. For the icing, I decided to use my buttercream recipe, but spiced it up with blue curacao liqueur and a couple drops of yellow food dye.

End results? The icing was PERFECT. The cupcakes? They were a little stronger than I wanted them to be, so it overpowered the lime taste. Just a little. I think I may use just a little less tequila next time (my hubby's coworkers all thought they were great, though!). But aren't they pretty?

What type of drink do you think would make a good cupcake?

Ice Cream Cookie Cup

Ice Cream Cookie Cup

I wanted something a little different to eat with my ice cream than just a simple cookie or brownie, and I didn't want a sundae. So I decided to make mini bowls out of chocolate chip cookie dough for this vanilla ice cream. This ice cream cookie cup is topped with caramel drizzle, dark chocolate ganache, and just a little bit of whipped cream. They were just big enough to hit the spot, but small enough to help with portion control!

What type of cookie dough would you make your cups out of, and what type of ice cream would you pair with it? I have a few other ideas rattling around, but I'd love to hear yours, too!

Red Velvet Cheesecake

Red Velvet Cheesecake

So, while I was "away", I made this fantastic Red Velvet Cheesecake. The bottom layer is a cheesecake with an Oreo crust, the top layer is an extremely moist red velvet cake, with generous helpings of dark chocolate ganache in between and on top to decorate, as well as cream cheese icing around.

I'm Back!

Red Velvet Cheesecake

So, I realize that it's been a little while since my last post here on the site, and I apologize. It's not that I haven't been baking. It's that I moved from Orlando, Florida to Charlotte, North Carolina and was semi-homeless for about a week and a half. That means that my baking has been done in Virginia (my hometown) and in my new city. And then I had to dig out all the equipment to edit the pictures. The picture above is of me decorating a Red Velvet Cheesecake (which was to die for, by the way), and it's just the first of many pictures to come. So, be sure to continue to check back regularly over the next week or so as I update the website with pictures and stories! It feels so good to be back!
