Ice Cream Cookie Cup

I wanted something a little different to eat with my ice cream than just a simple cookie or brownie, and I didn't want a sundae. So I decided to make mini bowls out of chocolate chip cookie dough for this vanilla ice cream. This ice cream cookie cup is topped with caramel drizzle, dark chocolate ganache, and just a little bit of whipped cream. They were just big enough to hit the spot, but small enough to help with portion control!

What type of cookie dough would you make your cups out of, and what type of ice cream would you pair with it? I have a few other ideas rattling around, but I'd love to hear yours, too!
