Strawberry Streusel Muffins

I had been wanting to make a breakfast item that wasn't the usual pancakes, waffles, bacon, eggs, etc. I saw a pin on Pinterest called "The Best Ever Blueberry Muffins" and figured I would see what I liked and didn't like about the recipe, and go from there. Don't get me wrong, I love blueberry muffins... But I decided that I wanted to used strawberries to mix things up, and try something you don't see every day. 

I modified the recipe quite a bit to my creative liking (i.e. added brown sugar, didn't use lemon, baked at a lower temperature, etc... I would go into specifics, but a girl's gotta make her money somehow). As you can see from the picture, the experimenting paid off. These muffins were fabulous! So much so that my hubby had eight of them the first day I made them (and I must admit that I had three)! They were super moist, and were so good that they tasted like they were store bought.

I definitely see myself making these on a regular basis, and even experimenting with more fruits. Any fruits you would like to see in one of these scrumptious streusel muffins?
