This may seem like a strange and unrelated question, but who here likes IKEA? Picture me raising both hands in the air with a huge smile on my face. Blame my husband... He got me hooked!
Now, let me explain why I brought this awesome store up. Not only do they sell pretty sweet furniture and various other awesome things, but they also sell lingonberries, lingonberry juice, and have said lingonberry juice in the soda machines in their cafes. They have posters for it all over their cafes, and when I see them, the lingonberries make me think of cranberries. However, they don't particularly taste like them. They're much sweeter and don't have the bite that cranberries do. They are also very high in antioxidants, and Dr Oz says that they are the new superfruit!
On our last excursion to IKEA we had our usual meal in the cafe, including our glass of lingonberry juice mixed with Mountain Dew. As we were getting ready to check out, I realized that they not only sold lingonberry juice (in juice boxes), but also preserves, etc. This made me very happy, and it inspired these very cupcakes!
Now, onto the cupcakes! They are vanilla and Mountain Dew flavored. Yes, you read that correctly-- Mountain Dew. But don't worry, they don't have a gross, flat Mountain Dew flavor. To be honest, you can't really even tell that it's in there. And, of course, as you can tell, I plunged them with my special lingonberry filling, then topped them off with cream cheese icing and a mixture of different types of sprinkles. My husband and others have already told me that they like these more than my Strawberry Cream Cheese Cupcakes.
I did something a little different this time. If you look at the picture at the top of this post and then the picture at the bottom (just above), you will notice that I took the time to decorate the cupcakes in two different styles. I would love and really appreciate your feedback.
