Ahhh! Don't these look incredible?!? It's so weird how and when I come up with ideas for new creations and experiments. I was in that half awake, half asleep stage in bed the other night, and I was "daydreaming" about cheesecake.
The funny thing is that I had been thinking about cheesecake and a picture of a crustless one on Pinterest that I saw like two months ago. After making these, I had to look up the picture all over again so that I could give you all the link to the cheesecake that I had been thinking about that sort of inspired these brownies.
They're actually a spin off of my Red Velvet Cheesecake Brownies, but with a white chocolate brownie base and a shredded coconut "crust". They are extremely moist and chewy, have just the right amount of "bite" (that almost tastes like spice because of the mix of the coconut and white chocolate flavors) to give them a unique flavor, and are incredible served cold or at room temperature.
These were definitely an experiment/ creative whim gone well, and I will be adding these to the long list on my menu page.
