Thanksgiving: Pie, Pie, and More Pie!

Just one of the four pies that I baked for Thanksgiving dinner!

I know that this post is WAY overdue. I blame it on getting a new laptop, having tons of editing to do, and the holiday season! I know, I know-- excuses, excuses! Though, I guess it's better late than never, right?

So, Thanksgiving was just my husband and I this year... However, we had enough food to feed at least six people! We got our turkey on sale at the grocery store for less than $.15 a pound and I wanted to experiment with new pies, which explains most of why we had so much food left over.

As you can see, our dining room table was completely taken over by the food! We had turkey, mashed potatoes, cream corn, crescent rolls, sparkling cider, and pie (two pumpkin, one apple, and one berry). Our turkey turned out so well that when we took it out of the bag to put it on the platter, the meat started sliding off the bones. That turkey was moist!

Of course, the best was saved for last-- PIE! Woohoo! Seriously, who can resist amazing pies on Thanksgiving?!? I made my usual two pumpkin pies, since my husband absolutely loves it, and then I made an apple pie and a berry pie.

Like I said before, I wanted to experiment with the pies. So, I completely made up the recipes on the fly! I'm very thankful that they turned out, or you probably wouldn't be reading this post. Above is the apple pie, and below is the berry pie. I went a little out of the box on this one. I used fresh strawberries, blueberries, and pomegranates. So yummy!

I don't even have words for how fantastic the berry pie was. However, what I can say that might help, is that after the first piece, we decided to save the best for last and finish off the other pies before finishing this one.
